Stevia-Sweetened Pumpkin Pudding

Ingredients:

• 4 large eggs

• 1 (15 oz.) can pumpkin

• 1/2 cup full-fat coconut milk

• 1/2 tsp salt

• 1/2 tsp stevia liquid

• 2 tsp cinnamon

• 3/4 tsp ground ginger

• 3/8 tsp cloves

• 1 tsp vanilla extract

Preparation:

1. Preheat oven to 350°F. Butter a pie pan or casserole dish.

2. In a large bowl, beat the eggs. Add the pumpkin and coconut milk, then mix in salt, stevia, spices, and vanilla, stirring thoroughly.

3. Pour the mixture into the buttered dish and place on the middle rack of the oven. Bake for 30-40 minutes, or until the center is just slightly jiggly. It will continue to set as it cools.

4. Place on a cooling rack, then refrigerate until chilled. Serve topped with nuts, seeds, and coconut whipped cream.
